Aalto’s inspiration runs deep. From Pyramid Lake’s shimmering waters to the sky-scraping peaks that tower above, we’ve translated our neighbouring natural wonders onto our menu. The result is what we call “lake-food” — a homegrown interpretation of seafood that spotlights Jasper’s finest regional flavours.
For 17 years, Shane Rutledge has worked in professional kitchens, but his love for food began as a kid cooking and baking with his mom. Coming to Aalto from Jasper’s innovative Terra restaurant, Chef Shane is constantly inspired by the beautiful Rocky Mountains, the region’s fresh ingredients and now, the view over Pyramid Lake.
As chef de cuisine, he says his current favourite Aalto dish is the pan-seared gindara sablefish with fermented barley, umeboshi ginger cream and rainbow seaweed — but off duty, you might find him enjoying a big bowl of pho or ramen.
