That means not only striving to minimize our environmental footprint, but also showing appreciation for the incredible people of Jasper. That’s why we make it a point to source locally for our restaurants, hotels and attractions.

“We show respect to the local people we deal with; we promote the region of the products we sell to our guests,” says Martin Brenner, executive chef within Banff and Jasper. “If people want to go to a region, they want to taste what the region has to offer, so we do that with the local vendors we partnered with over the years. Guests who come from all over the world are happy to see this and taste it.”

The importance of local farmers & local produce

“We are supporting artisans and they have something special,” Brenner says. There is much care and enthusiasm from the local farmers in the region, and locally sourced produce offers superior quality, freshness and lower environmental impact than from outside the province.

“Without the farmers we wouldn’t have amazing products we can enjoy on a daily basis,” Brenner adds. “It’s important for us to strengthen that community and promote what we have to offer because without the farmers we wouldn’t be where we are right now.”

Alberta has an abundance of fresh produce to offer, and Brenner highlights two products that make the province stand out. He notes that Alberta gold canola oil is often more favourable than olive oil sourced from Greece or Italy, while Haskap berries — sourced from Vitalaberry Farms in Spruce Grove — are unique in their ability to survive in temperatures as low as –40 C.

Meet a Few of Our Jasper Partners

Locally sourced ingredients are at the heart of our restaurants, offering guests a true taste of Alberta. In Jasper, we partner with Sylvan Star Cheese at many of our restaurants, like The View as well as Hearthstone Pizza and Walter’s Dining Room at the Forest Park Hotel. On the beverage side, Folding Mountain Brewery provides quality craft beer to enjoy alongside delicious bites.

Robson Farms supplies many of the vegetables to our Jasper restaurants, like fresh kohlrabi, broccoli, carrots and sprouts.

“They have a nice variety,” Brenner concludes. “Whatever is in season we try to source there.”
